When Champagne Becomes a Place

A glass of Champagne can be served almost anywhere. Ruinart’s recent collaboration with Cheval Blanc Paris asked a more ambitious question: can the guest be brought into the landscape, history and philosophy contained within the glass?

From October 15 through October 25, 2026, La Table Ruinart returned to Cheval Blanc Paris for its second edition. Around one shared table accommodating approximately 16 to 18 guests, chef Arnaud Donckele presented a seven-course menu conceived as a conversation among gastronomy, Champagne terroir and seven Ruinart cuvées.

Donckele is responsible for two restaurants awarded three Michelin stars: La Vague d’Or at Cheval Blanc Saint-Tropez and Plénitude at Cheval Blanc Paris. Since 2023, he has worked with Ruinart on the relationship between cuisine and Champagne, including experiences at the house’s historic property in Reims.

The Paris residency consisted of two lunches and six dinners. Pairings included Ruinart Blanc Singulier Édition 20, Dom Ruinart Blanc de Blancs 2009 and 2013, Dom Ruinart Rosé 1996 and an exclusive cuvée. Separate masterclasses offered comparative tastings devoted to chardonnay and vintage Champagne.

The important detail was not simply the number or prestige of the bottles. Ruinart used dining to translate an agricultural and environmental identity into an experience. The temporary decor drew upon the house’s vineyard at Taissy and its historic gardens in Reims. Chardonnay appeared as both a flavor and a narrative thread.

Donckele’s cooking was particularly suited to the exercise because of his attention to sauces. A sauce can connect ingredients that would otherwise remain separate; in a pairing menu, it can also form a bridge between food and wine. The Champagne was therefore not treated as a ceremonial accompaniment introduced before dinner. It participated in the structure of the meal.

The shared table altered the social character of the experience. Rather than isolating guests at separate restaurant tables, it encouraged conversation among people who may not have arrived together. The brand became the host of an encounter, not merely the supplier of a product.

This is increasingly important in luxury hospitality. A beautiful dining room and expensive menu are no longer sufficient distinctions. Guests seek access, knowledge and a story they can enter. Masterclasses, vineyard references and direct contact with culinary specialists transform consumption into participation.

There is, naturally, a commercial purpose. Ruinart wants guests to understand, and purchase, its wines. Cheval Blanc benefits from association with one of Champagne’s historic houses. Yet the collaboration succeeds because education is not treated as a lecture added to dinner. It is embedded in the menu, table, design and conversation.

For FQM, the model is instructive. A cultural gathering can introduce a house, region or tradition through several senses at once. A Champagne producer, chef, artist and historian could create something richer together than any of them could offer independently.

The enduring luxury may not be the bottle alone. It is the feeling that, for the length of a meal, the landscape from which it came has been brought to the table.
